What is headcheese?
Scandinavian tradition, homemade cold cut, 3-day holiday project, meat. A staple of the Julbord (the Christmas version of the Swedish smorgasbord), headcheese is a somewhat polarizing delicacy — think “terrine” on steroids — loved by many, scary to others as a mystery food.
Headcheese, the documentary, is an exploration of one family’s history of making the holiday specialty and, by extension, an exploration of food and tradition. We follow Carl Peterson from his getting the pig’s head and other meat from Sal the butcher; to the cooking, pressing, and brining processes; to Carl serving his creation — to a host of family “judges” of all ages on Christmas Eve.
Headcheese shows how the sausage headcheese is made as it explores the broader and deeper meaning and value of keeping of traditions, even as they evolve into the future.
Headcheese documentary estimated completion date — 1st qtr / early 2nd qtr 2026
When completed, Headcheese will be submitted to film festivals around the country and possibly internationally. All film participants will be notified of film festival acceptances / screenings.
